What it means
Our interpretation.
It is the Doctor borrowing McCoy's best-loved complaint and aiming it at a captain who wants a monster-hunter. Where Bones refuses jobs outside medicine, the hologram does it with a Moby-Dick reference and a straight face. Robert Picardo has said the audience enjoys it whenever he invokes the spirit of McCoy, and it became the show's wink to the older series.

In the Voyager episode "Bliss" (season five), the ship is drawn toward what looks like a wormhole home to Earth, and nearly everyone aboard believes it, apart from Seven of Nine and the ship's holographic Doctor. A hunter named Qatai, who is chasing a ship-devouring creature, comes aboard with the truth about the wormhole. Qatai, a self-styled Captain Ahab, is impressed by the Doctor's versatility and offers him a place on his ship. The Doctor compares himself to Ishmael and politely declines.
