Han's answer to C-3PO's calculation of the odds of surviving an asteroid field, snapped out as the Falcon dives into it with an Imperial fleet behind. It sums up the smuggler: confident, impatient with numbers, and entirely willing to prove the numbers wrong. Fans quote it for any plan that looks foolish on paper, and 'never tell me the odds' has become an everyday way to wave off a warning before doing the risky thing anyway.

Fleeing Hoth with TIE fighters on its tail and a broken hyperdrive, the Millennium Falcon needs to shake off its pursuers, so Han steers it into an asteroid field. Leia can't believe he's really doing it, and C-3PO helpfully announces that the possibility of successfully navigating an asteroid field is approximately 3,720 to 1. This is Han's reply, and he ends up hiding the ship in a cavern on one of the larger asteroids.
